Hearty and flavourful soups are greatly appreciated in cold weather and although we don’t want to pick favourites, these three are outstanding. First is minestrone, filled with fresh-cut zucchini, green beans, mirepoix, and garnished with basil pesto and second is a luxurious, earthy soup made with Autumn Vegetable Root Mix. Lastly, creamy potato, cauliflower and kale soup that starts off with gently cooking mirepoix is our idea of complete vegetable bliss.
