Our peeled and cut butternut squash is a wonderfully versatile and seasonal item, perfect for fall and winter menus, presented with a creamy butternut squash sauce for pasta and a squash and red lentil curry garnished with pickled lemon slices.

We’ve substituted squash for eggplant in tangy and succulent caponata that is lightly cooked with fresh-cut celery, onions, and grape tomatoes. It is perfect for spooning onto toasted rustic bread, served over pasta, or as a side.
