Four Bone-in Beef Short Ribs
Rather than a traditional soy-based marinade, we’ve used a guajillo chile and lime juice marinade to give these ribs a deep flavour with a hint of tartness. This goes perfectly with grilled onions and yams, green beans with a dressing of salsa macha, leaf lettuce for wrapping the meat and vegetables, and sweet and sour chamoy sauce made with fresh-cut pineapple.
